In a Subway like menu, you can choose your bread, your "protein" (chiken, beef, veggie), toppings, cheese. At the end, one can produce interesting combinations!
McDonalds did some experiments recently in this direction, but although this may be great in order at table restaurants, it can certainly bring a great loss of time in order at the counter.
